Which bread is for me?

Why all the silly names – I just want a loaf of wholemeal!?

We’re sure once you get to know our loaves you’ll love calling them by their nicknames too. Our menu changes seasonally… But here’s some shorthand code:

Wholemeal = Whole Lotta Love

White = Star White

Wholemeal Spelt = Whole Honey Spelt

Spelt/ Khorasan blend = Khor Blimey (Khorasan aka Kamut is an ancient grain like spelt, only yummier).

Multigrain = Seedy Side

Fruit loaf = Fruit Fairy

I’m avoiding gluten.

All our bread contains gluten. But some of it contains less gluten and is tolerated better by people with sensitivity to gluten. Namely our Khor Blimey (100% Khorasan/Spelt) and our Whole Honey Spelt (100% whole spelt).

All our breads are also slow-fermented, which means they are much more digestible than your average fast-fermented commercial dough-puff masquerading as bread. What does slow fermentation do? Well, the anti-nutritional phytic acid in the grain is reduced and the gluten is fermented (kinda like pre-digestion by bacteria).

Allergens and intolerances

All our products are produced in a small bakery on shared equipment and thus may contain:

  • cereals containing gluten and their products – namely wheat, rye, khorasan and spelt including their hybridised strains
  • egg
  • milk
  • sesame seeds
  • tree nuts
  • soya
  • peanuts
  • lupin

I’m a vegan.

As a general rule, bread is vegan! All our breads are vegan, except for our Whole Honey Spelt (the clue is in the name), Sweetness & Light and fruit loaves. But ALL of our treats are not.

Is it organic?

Yes. Pretty much. All our flours are certified organic or biodynamic, most of them sourced locally within Victoria or NSW. We use certified organic spices, dried fruits and seeds in all our breads. Sometimes we choose local over organic, because we think local food is fabulous. These times include:

*The honey used in our treats is from our very own backyard beehive.

*The eggs used are often from our own hens/quails, when we have enough to spare for the bakery. At other times they are always free range.

*We use beautiful Gippsland Jersey Cultured butter & milk.

*The lemons we zest for our treats are often from a local greenthumb’s tree.
